Regional production and real craftsmanship
In his distillery at Hamburg Altona, only organic products from the region North Germany are used. Thus, to broaden his palette of tastes, it was obvious to get in touch with the producers of halophytes at Ökowerk Emden. Impressed by the guided tour through the field lab and the “saline lunch”, he got offered, Mario selected a small variety of plants he would like to experiment with in his distillery. With a bag full of cuttings, he went back to Hamburg and the adventure of distilling Salicornia and other halophytes began….
Results from the experiment
Meanwhile, Mario wrote to us that Sea fennel (Crithmum maritimum), Golden Samphire (Inula crithmoides) and Salicornia have proved to be very suitable for distillation. They produce a fine, fresh taste with a slight hint of the North Sea breeze. A tasting will be organized during the next project meeting in Emden from 11-13 October.
