'Bio kann jeder' - an online workshop to use more ecological and regional products in canteens of kindergartens and schools

On 10 November 2020, as part of the EU-funded REFRAME project and in cooperation with U. plus, an agency for environmentalcommunication, the district of Wesermarsch organised an online workshop for kitchen staff, kitchen managers, those which are responsible for catering in schools and school management on the topic of "Organic in school catering - new ideas for kitchenwork with a focus on legumes".

Originally planned as a face-to-face event, the workshop was converted into a digital format due to the current Corona developments. The aim of the workshop was to inspire actors from experience to use local and organic food and to show them the advantages (health, animal welfare, environment). They were given support, information, tips and knowledge on how to use it in their everyday work and what local sources of supply are available. A nutritionist also explained interesting facts about legumes and their potential as a source of protein in the balanced children's kitchen. Against the background of the increasing environmental pollution caused by the production of animal products, legumes offer a good alternative to reduce meat consumption in canteen kitchen.

During the workshop there was a lot of opportunity to answer questions and exchange ideas with the other participants, sot that the different catering models and situations with their particular challenges were discussed. The participants took a lot of new information home, which will now be tested in their everyday work.
